My San Sebastian Burned Basque Cheesecake – From Spain to Perth

Hi! I’m the baker behind La Bomb Cookies, and I’m originally from Spain. I grew up eating burned Basque cheesecake—or as we call it back home, “tarta de queso.” It’s one of those desserts that brings comfort, tradition, and pure joy in every bite.

When I moved to Perth, I knew I had to share this amazing cheesecake with you. I’ve spent a lot of time perfecting my recipe—making sure it’s just as creamy, soft, and melt-in-your-mouth as the ones I grew up with. The magic is in the texture and the beautiful burned top—that slightly caramelised crust that makes it all come together.
